This dish is made using a generous amount of thick tea from a long-established tea shop in Higashiyama, Ishikawa Prefecture, which is a part of the prefecture's tea culture.
In order to prevent the flavor from escaping, we use up every cup of thick tea we receive to knead the yokan.

This yokan is made using fermented red beans using a unique fermentation method.
The amount of sugar is about half that of traditional yokan, making it less sweet.
Additionally, the natural glucose contained in the fermented red beans gives it a clean, sweet aftertaste.
