Fermented Yokan (jelly) - Mikame Koicha

This dish is made using a generous amount of thick tea from a long-established tea shop in Higashiyama, Ishikawa Prefecture, which is a part of the prefecture's tea culture.

In order to prevent the flavor from escaping, we use up every cup of thick tea we receive to knead the yokan.

-Characteristics of the taste of Mikame-

  • This yokan is made using fermented red beans using a unique fermentation method.
  • The amount of sugar is about half that of traditional yokan, making it less sweet.
  • Additionally, the natural glucose contained in the fermented red beans gives it a clean, sweet aftertaste.

  • Fermented red beans are rich in various nutrients, so simply eating them can help you build a healthy body.
